about us

Cordelia Culver Petersen is the force behind CHEF CORDELIA, and her passion for creating memorable food and experiences drives everything we do.  Since 2007 we have been catering events in Los Angeles and beyond.  In 2016 we launched The Lodge at Malibou Lake, and in 2023 we debuted Wrensmoor Castle.

CORDELIA CULVER petersen     OWNER + CEO

Growing up in Santa Monica, Cordelia took an interest in cooking from a young age.  She spent school holidays traveling the world, visiting Europe, India, China, Japan, the Middle East, Africa, among other places. Amidst these travels her palate was memorizing the flavors and characteristics unique to these cultures, and she loves using ingredients and cooking techniques from around the world. Cordelia spent her 20’s working in art department in the film business, then followed her heart and enrolled in culinary school. Graduating Le Cordon Bleu at the top of her class, she cooked at top-rated Gramercy Tavern in Manhattan, then returned to Los Angeles in 2007 to form her own catering company. After 15 years running the kitchen, she handed over head chef duties to industry veteran Chef Tiffany Sewell in 2022. When not working on plans to conquer the world, Cordelia can be found day-tripping around SoCal with her husband, cinematographer Eric Gustavo Petersen, and their sons Theo and Louie.

SASHA URBELIS     DIRECTOR OF OPERATIONS

Sasha was born and raised in Canada on the outskirts of Toronto. From there she moved to Chicago and began her career in hospitality and foodservice, spending a decade working her way up through the ranks - from waiting tables, bartending, bookkeeping, to general manager for an esteemed restaurant group. Upon moving to Los Angeles her career shifted towards event production, as she found herself on the front lines of operations management for multiple small businesses before landing at Chef Cordelia Catering. On her days off Sasha can be found exploring the vegetarian restaurants of LA, hiking the canyons, or expanding her knowledge base via classes and podcasts of all kinds.

tiffany sewell     executive chef

A native of Washington state, Tiffany’s first high school job was washing dishes in a neighborhood restaurant. From there she worked her way into the kitchen and up the line. Nearly a decade in San Francisco restaurants trained her in various cuisines, and 5 years as the private dining chef at Brennan’s in New Orleans honed her skills for event catering. Tiffany now brings her extensive fine dining experience and booming presence to our kitchen.  She and Chef Cordelia share a common love of talking about food endlessly, and of making tacos from any and all available leftovers.  In her off hours Tiffany collects esoteric cookbooks, plans her next tattoo, and cuddles with her cat Haruki.

kathleen poirier sous chef

Born the daughter of a fisherman, Kathleen began her lifelong love of food by helping her father prepare his catch of the day.  Her passion for cooking took further hold while attending culinary summer camps throughout childhood. Kathleen’s professional career started at a corporate steakhouse chain where she worked her way up from dishwasher to sous chef.  A hunger for fine dining training led her next to Tom Colicchio’s Craft LA where her strong work ethic and impenetrably positive demeanor helped her to quickly hone her culinary skills. At Chef Cordelia Catering, Kathleen feels right at home cooking with a team of ambitious and accomplished women. When she’s not in the kitchen, Kathleen loves trying new restaurants, rooting for the Dodgers and hiking around the San Fernando Valley.

200 GUESTS. 3 EVENTS. NO SWEAT

“We hosted an outdoor wedding with 200 guests. It was an extensive affair- more like a movie production than a wedding in many ways. We planned many layers of catering for the night, including a special welcome cocktail and appetizers before the ceremony, the amazing dinner, and a late night munchie service. In the years following our wedding so many of our guests have said it was the best food they have had at a wedding - ever. Chef Cordelia made us feel special on our wedding day and she made the event custom tailored to us." - JEREMY AND KIM K, YELP

EVENT PLANNER'S SECRET WEAPON

"Chef Cordelia is amazing. We've used her services for all our venues and events and it has been flawless every time. She works well with clients needs and her food is delicious. I highly recommend Chef Cordelia for catering small to large scale events." - ELLE N, EVENT PLANNER

A FAMILY TRADITION

“I have hired Cordelia for many events over the years. She and her staff have catered my bridal shower, my baby shower, my daughter's 3rd and 4th birthday parties, my 29th, 32nd, 35th, 36th and 39th birthday parties, a 4th of July party, a Halloween party...the list goes on and on. Her attention to food trends and decor/detail is unparalleled. She always has fresh new ideas and fun new ways of plating food. She has the ability to completely staff the party so I can just sit back and play hostess for the evening! She has diligently worked with me on my budget, making sure I am comfortable and happy. Chef Cordelia and her staff are like a part of my family now. Not only do we look forward to her food, but we look forward to seeing her year after year!” - RM, YELP
